But there are many great, quick, no-baking-required desserts that are not too bad for your waistline. Next time you get a sweet tooth on a hot, summer day try one of these easy recipes.
Easy as 1-2-3 Fruit
Blender
Ingredients:
• 21 oz. cherry fruit pie filling (or fruit filling of your choice)
• 8 oz. container whipped topping
• ¾ cup walnuts, toasted
Directions:
• In medium bowl, fold together pie filling and thawed whipped topping.
• Mix well.
• Spoon into six parfait glasses and sprinkle with nuts.
• Serve immediately or refrigerate until ready to serve.
Frozen Strawberry
Margarita Pie
Ingredients:
• 1½ cup finely crushed pretzels
• ½ cup brown sugar
• ½ cup melted butter
• ¼ cup lime juice
• ¼ cup orange juice
• 2 Tbsp. lemon juice
• 14 oz. can sweetened condensed milk
• 10 oz. pkg. frozen strawberries in syrup, thawed
• 2 cup whipping cream
• 2 Tbsp. powered sugar
• 1 tsp. vanilla
Directions:
• Combine crushed pretzels, brown sugar, and melted butter in small bowl. Press into bottom of ungreased 10-inch springform pan and chill until firm.
• Combine all of the juices with the sweetened condensed milk in a large bowl and beat until combined.
• Puree strawberries with juice in a blender and add to the condensed milk mixture; beat until completely combined.
• In small bowl, beat whipping cream with powered sugar and vanilla; fold into strawberry mixture, then pour over chilled pretzel crust. Cover and freeze until firm. Let stand 10 minutes before slicing and serving.
Chocolate Marshmallow Sandwiches
Ingredients:
• 32 chocolate graham cracker squares
• 1¾ cups chocolate fudge frosting
• 2 cups mini-marshmallows
• 1 cup marshmallow cream
• ½ gallon frozen yogurt, softened
Directions:
• Place graham crackers on a work surface. In a small bowl, mix frosting and mini marshmallows gently.
• Spread half of the graham crackers with frosting mixture.
• Stir Marshmallow cream, then spread cream on other half of graham crackers.
• Add ½ cup ice cream to marshmallow cream crackers.
• Press together ice cream side with the frosting side of the graham crackers.
• Individually wrap in plastic wrap and freeze until firm.
