Enjoy a summer quiche
I’ve heard that real men don’t eat quiche, but I don’t know if that’s the same for a real lady. I say that because I absolutely adore quiche as an entrée for lunch, breakfast or an evening snack.
As a matter of fact, I probably enjoy the one-dish meal at least two to three times a month. Sometimes I order it at a restaurant for breakfast and other times I make my own. When I’m experimenting in the kitchen, I usually adapt a quiche recipe and add fresh spinach or broccoli so that the dish is more filling.
I’ve been making my favorite quiche recipe for about seven years. I’ve even made it for dinner parties and for friends who needed a good dish in a time of need. I must say that it’s an absolutely tasty dish that real men and women can enjoy. Let me know what you think.
Spinach, sausage and red bell pepper quiche
3/4 pound hot or sweet chicken or turkey sausage, chopped 2 red bell peppers, minced (about 1 1/4 cups) 1/4 cup grated Cheddar 1 pound of fresh spinach 2 tablespoons freshly grated Parmesan 2 large eggs 1/2 cup heavy cream 3 tablespoons milk 1 deep dish pie crust
In a large skillet, sauté the spinach for about 10 minutes. Then add the sausage with the bell peppers, covered, over moderately high heat, stirring and breaking up any lumps, for 7 minutes, or until the sausage is no longer pink and the bell peppers are soft, and drain the mixture, discarding the excess fat.
Transfer the mixture to a bowl, stir in the remaining salt, the Cheddar, and the Parmesan, and spread the mixture in the bottom of the shell. In a bowl, whisk together the eggs, the cream, and the milk, pour the egg mixture over the spinach and sausage mixture, and bake the quiche on a baking sheet in the middle of a preheated 425°F. oven for 15 minutes. Reduce the temperature to 350°F. and bake the quiche for 10 minutes more.
